Regarding the question, why not?

You mean to use both Loki's data and common Prometheus metrics in a Grafana's panel at the same time?

Just use Loki Recording Rules to create metrics from logs, and save them to the Prometheus, and then in Grafana use Prometheus as a data source to make queries for both metrics.
